Throubes are basically black olives but with wrinkles. Usually, olives shrivel up after curing. But these are fully mature when they are picked, because they have become ripen and shrivel on the tree. These are actually the only olives that can be eaten directly from the tree. And they are dry cured for commercial use. Most throubes come from the Greek island of Thassos and from Amfissa. Internationally offered under many names depending on their origin (e.g. Amfissa, Thassos).
