“Giant Elephant beans from Prespes are a traditional product of the region. Today they are labeled as Protected Geographical Indication (PGI) products. They are processed locally, maintaining the product’s locality at every stage of production and ensuring a high and, more importantly, consistent quality.
Also, they are the basic ingredient of the famous traditional Greek recipe for fasolada [bean soup]. They are undoubtedly exceptionally healthy and nutricious and form an integral part of the Mediterranean diet.
