Chalkidiki savoury olives are of small size with deep, black colour, are placed in layers of dry salt and have a high oil content. They have a fruity and fresh taste as well as a lemony aroma. They are also called tsakistes (translated as ‘crushed’ in English), because during the process they are slightly crushed.
